Abstract
The contents of Ca, Mg, Fe, Zn, Cu, Mn, Cr, Cd and Pb in 20 kinds of oil samples were determined by microwave digestion-flame atomic absorption spectrometry and graphite furnace atomic absorption spectrometry respectively, and the metal elements in the oil samples were comprehensively analyzed and evaluated. The results showed that the contents of metal elements were differences among different kinds of edible oils, however, the metal elements in 20 kinds of oil samples were rich, and Ca, Mg, Fe and Zn were the most metal elements. Heavy metal elements Cr, Pb, Cd were detected in 3 kinds of waste oil samples, and some heavy metal elements was higher than the limit value of National standard. Therefore, it was preliminarily judged that 17 kinds of edible oils were safe to eat, while gutter oil was less safe and should not be consumed.
