油脂样品中金属元素含量分析

摘要 

本文分别采用微波消解-火焰原子吸收光谱法、石墨炉原子吸收法测定了20种油脂样品中金属元素Ca、Mg、Fe、Zn、Cu、Mn、Cr、Cd、Pb的含量,并对油脂样品中各金属元素进行了综合分析和评估。结果表明:不同种食用油之间各金属元素的含量存在差异,但20种油脂样品中金属元素种类均较为丰富,以Ca、Mg、Fe、Zn金属元素含量居多。3种地沟油样品均不同程度地检出重金属元素Cr、Pb、Cd,有些含量显著比国家标准限定值要高。初步判断17种食用油具有食用安全性,而地沟油安全性较差,不宜食用。

Abstract: 

The contents of Ca, Mg, Fe, Zn, Cu, Mn, Cr, Cd and Pb in 20 kinds of oil samples were determined by microwave digestion-flame atomic absorption spectrometry and graphite furnace atomic absorption spectrometry respectively, and the metal elements in the oil samples were comprehensively analyzed and evaluated. The results showed that the contents of metal elements were differences among different kinds of edible oils, however, the metal elements in 20 kinds of oil samples were rich, and Ca, Mg, Fe and Zn were the most metal elements. Heavy metal elements Cr, Pb, Cd were detected in 3 kinds of waste oil samples, and some heavy metal elements was higher than the limit value of National standard. Therefore, it was preliminarily judged that 17 kinds of edible oils were safe to eat, while gutter oil was less safe and should not be consumed.
